I’ve been wanting to share this recipe with you for weeks now! It’s something I’ve been cooking on a regular basis since I cooked it last month and let me tell you, it has quickly become our favourite dish for a quick, flavourful and healthy dinner. This to me is comfort food, perfect for those cooler nights. When it tastes this good, you can’t help but enjoy another bowl!

This rice dish is a one pot wonder. Why spend extra time in the kitchen cleaning up when you could spend more time with hubby, wife or the kids! I love when there’s something so simple tastes so good! I especially love it when you throw everything together and watch the magic happen!

Dinner on the table in less than 45 minutes! You’ll want to add this to your weekly dinner list, trust me!

One pan Spanish rice with beef | Miss Food Fairy

PREP: 8 minutes      COOK: 35 minutes     MAKES: enough for 4 people
INGREDIENTS:
1 tbsp olive oil
500gms beef mince
1 onion, finely diced
½ tsp dried oregano
½ tsp chilli powder
½ tsp ground cumin
1 tsp smoky paprika
1 garlic clove, grated/minced
2 tsp olive oil
¾ cup Basmati rice
1 cup chicken stock
1 cup tomato passata
4 cubes frozen spinach

TO SERVE:
3 spring onions, finely sliced
Lime wedges

METHOD:
Heat a large frypan, with a lid, on medium-high heat. Add oil and onion. Fry for 3 minutes. Add the beef mince. Break up with the back of your spoon or spatula and fry until no longer pink, another 3 minutes. Sprinkle in the spices and garlic until well combined. Drain the meat mixture and set aside in a bowl.

Fry the olive oil and rice for 2 minutes. Add back in the meat mixture and combine. Stir through the stock and passata. Cover the pan with a lid. Turn heat to low and simmer for 13 minutes.

Turn off the heat and add the spinach. Place the lid back on and let stand for a further 10 minutes. Gently fold the spinach through the rice and serve. Top with spring onions and lime wedges. Enjoy!

COOK’S TIPS:
This is the most important tip – please resist the urge to stir this dish. Place the lid on and leave it alone for the time mentioned. You will get the perfect fluffy rice every time. Stirring will only make the rice gluggy and mushy.

If adding any extra veggies, beans or chorizo, add at the same time as the spinach. If using hard veggies, like carrots, pre-cook before adding to the rice.

To make this vegetarian, add tofu, chickpeas or soy sausages in replacement of the beef mince.
