Happy February everyone, I missed you all so much. Hope you all brought in the New Year doing the things you love with the people you love. Did you go away with your family during school holidays? Our nephews came for a week when my sister & bro-in-law both went back to work. We did something everyday & we were all exhausted by the Friday.
I’ve spent most of January recipe testing, re-designing my blog (do you like it?) all by myself. Usually my husband, Mr I.T. helps me, as I’m not too tech savvy, but I was so proud of myself for accomplishing this big task. I had to buy myself a calendar to organise my time better. Days just disappear otherwise!
Pictured above is this double yolker! This is probably the second double yolker in my cooking life. I was so excited that I almost knocked the bowl off the bench!

Then two days later I made an omelette for brunch and low & behold, another double yolker! Two double yolkers from the same carton of eggs! I couldn’t believe it! I was over the moon with excitement, again! I was told that this will bring me good fortune for the year! The eggs are from Coronet Bay Farm in Gippsland.

One of my Chrissy presents – a wine stopper all the way from Italy. My sister-in-law went there for work & brought this back for me. I also received a voucher, with which I brought a new hair styler and some DVD’s. Hubby gave me a new Moto X Force mobile, as my old mobile was about to die. Love my new phone, all of my Instagram photos are taken with it.

Finally I found Magnum chocolate! I looked everywhere ever since the first ads on TV came out about six months ago. I had a craving for white chocolate and this didn’t disappoint. It was like eating vanilla bean ice cream, yumm. Loving the gold foil for an extra bit of class 😉

After Josephine from My Napoli Restaurant talked about Val Verde San Marzano tomatoes in October last year, I’ve been on the hunt for them. I finally found some at Woolworths so grabbed a couple of cans. I knew I should have bought more as now I can’t find them any anywhere! They were as good as Josephine said, they made my Bolognese sauce taste the best it’s ever tasted!

Great Ocean Road cheese found at Coles. It was on special so decided to give it a try. I have now found a great all-rounder cheese with a lovely melt for burgers or baked pasta.

A large jar of coconut oil found its way into my trolley. I ran out of the small jar I had and this was on special. Sure it may not be from Australia but the coconut really comes through in all my cooking. So far this is the best coconut oil I’ve tried.

#balconyview looking out at Port Phillip Bay on the 7th Jan and saw this amazing, huge cruise ship docking at Port Melbourne. Upon looking closer at the photo I found out it’s the Emerald Princess. It took up one whole side of the dock and it made the Spirit of Tasmania look like a toy boat! Isn’t she a beauty!
While we were on holidays from IMK, I created a few beautiful dishes, which you’ll absolutely love.
Roast sweet potato and spinach couscous with crispy skin salmon
Warm grilled corn bulgar salad with sliced chicken
Asian beef and noodle salad bowls
