I just love avocados at the moment. Every week I’ll buy two when I head to the fruit and veg store. I just love their bright green colour and creamy texture. I enjoy eating them sliced on toast with a poached egg; in a salad to go with your BBQ’d meat; smothered on my salad sandwich instead of using butter or mayonnaise and smashed as this dip with plain rice crackers. This dip makes a great party appetiser, just in time for all the festivities we’re all experiencing at the moment, or enjoy it as a snack throughout the day.
This dip is super easy to make – using only four ingredients – that sometimes I wonder why I don’t make this every day. Oh, I know why, I’d eat the whole lot by myself! And most times I do have to restrain myself! I have been known to sit down with a big bag of corn chips or rice crackers and finish the whole lot! This dip needs an addictive warning label!
You’ll never buy store bought avocado dip again. For a guacamole, add red diced onion, tomatoes, chopped coriander and chilli to enjoy with your tacos, nachos or quesadillas. TIPS:
To pick the perfect avocado, all I do is feel it. I’m looking for a firm to touch avocado.

Keep avocados in your fruit bowl at room temperature.
♥ ♥ ♥
Sprinkle your avocado with lemon or lime juice if not using straight away. This helps with the oxidation (browning).

If you have leftover avocados, place in a zip lock bag with a couple of splashes of lemon juice added. Store in the fridge and eat within 1-2 days.

If you’re not eating this straight away, place in the fridge for an hour or two before serving. NOTE: the dip will go slightly brown due to the French onion dip. Don’t worry, it still tastes amazing, just stir before serving. Remove from the fridge half an hour before eating.
INGREDIENTS:
1 ripe avocado, cubed
1 teaspoon lemon juice
70 grams Kraft cheddar cheese, grated
2 teaspoons powdered French onion dip
TO SERVE:
Corn chips, rice crackers or vegetables of your choice.
METHOD:
In a small bowl add the avocado and lemon juice. Mash with a fork.
Stir through the cheese and powdered dip.
Serve at room temperature with your choice of corn chips, crackers or vegetables.
