I love experimenting with flavours and this omelette is no different. Made with Gippsland free range eggs, from the Queen Victoria Market, wasabi cheese and kale micro herbs – delicious! Welcome to In my Kitchen for the month of May. So much to share with you all . . . so let’s get started.

In my Kitchen . . .

a.MissFoodFairys best ever goats cheese

. . . is the best goats cheese ever! I came across this when I worked at the tennis at the start of the year. It’s from Meredith Dairy, which is located in Victoria, and can be found in most supermarkets, fruit and vegetable stores or delis. We have this with lamb and also on our homemade souvlakis. Yumm, yumm, yumm!

In my Kitchen . . .

a.MissFoodFairys chilli salts from Oxfam

. . . are these African chilli salts I bought for $10 from the Oxfam shop. There’s a hot, mild and smokey chilli salt. You know how much I love chilli, so I found these chilli salts I was just a little bit happy! 😉 I haven’t had a chance to try them yet but they smell amazing! I’d love to hear any inspirational recipes or ideas in the comments below.

In my Kitchen . . .

a.MissFoodFairys health food purchases

. . . are organic cacao powder, organic coconut sugar, linseed (flaxseed) meal and organic quinoa, all from The Healthy Life in Geelong. I bought all these goodies to try less refined sugar, more fibre and no chocolate in the sweet things I make, to help my sister with some special dietary requirements . I’ve always wanted to make a dessert or breakfast using quinoa but I haven’t had time to research. If you would love to share any ideas or recipes with me, I’d love to be inspired by your comments.

. . . is the kale micro herbs I bought from my local Organic grocer, Organically Grown Malvern. Great garnish on our omelette (above) and in salads. I thought they were too cute to pass up 🙂

In my Kitchen . . .

a.MissFoodFairys organic couscous from MyKitchenStories

. . . is the wonderful organic Farro couscous from my beautiful friend Tania at My Kitchen Stories. We tried this the other day when I made my Moroccan lamb stew (stay tuned for the recipe) and it was absolutely delicious! It was perfectly fluffy and very tasty for spelt, which I’ve never tried before. Thanks Tania, we love it 🙂

In my Kitchen . . .

a.MissFoodFairys orrechette

. . . is some orecchiette I thought I’d try. I didn’t realise how long it takes to cook! I made a beautiful smoked trout and capers in a creamy sauce dish but it will need to be tested again as all my timings were out due to the pasta cooking time. The pasta itself is quite nice in texture and it holds its shape nicely. The sauce sticks perfectly to the orecchiette which I find a bonus with any pasta.

a.MissFoodFairys The Source Bulkfoods purchase

. . . are supplies from The Source Bulk foods in Prahran. I thought I’d stack up on goodies to nibble on throughout the day instead of potato chips and chocolate. In my supplies are (from top left hand corner) chickpea flour, polenta, almond meal, veggie chips, cashews, almonds and brazil nuts with fruit mix, chia seeds, sesame seeds & pepitas, LSA, Italian herb spice mix, gogi berries with cacao nibs and coconut oil.

In my Kitchen . . .

a.MissFoodFairys smokey freerange organic Gippsland bacon from QVM

. . . Otways free range organic smokey bacon from Big Vic Deli at Queen Victoria Market. I decided to give it a try as I’ve read many stories about bacon at the supermarket being full of water! So I grabbed half a kilo to try and guess what, splatter free bacon! Love the smokey flavour and the way it didn’t curl when cooked.

And the last item In my Kitchen this month . . .

a.MissFoodFairys mussels

. . . are the fresh mussels left over from school. We made seafood chowder and there was so many mussels that if we wanted to take them we could – so I did 😉 Unfortunately, I forgot to put them in some salty water overnight and majority of them opened and dried out!

  3. Ah, is that the trick – are we supposed to put mussels in salty water overnight? Thanks Nicole, I’ll do that next time! The Meredith Goat’s Cheese is the bomb! 🙂

    • I haven’t tried the salted water trick yet Celia as mussels don’t usually last overnight in our place but they live in salt water so to be kept alive they probably need that – let me know if you do try it 🙂

  4. I love everything in your kitchen this month. Meredith Dairy is my absolute favourite goat’s cheese. I am coveting that farro cous cous. I’ve not seen anything like that here. As to the quinoa, you can actually make a pretty decent porridge out of it if you are looking for a good breakfast dish. Not to sure about dessert though, unless you used it in place of rice in rice pudding.

  7. I’ve been buying that goat’s cheese and agree with you! I have also been cooking a lot with farro. I stopped buying supermarket bacon a while ago as it’s not free-range. I now buy bacon produced in the ACT and it is so much better and like the one you’re buying, no splatter! xx

    • I’ll have to keep my eyes open for some ACT bacon in the delis at Prahran market – I’m always looking for bacon that doesn’t splatter, or should I say that isn’t full of water! x

  8. It all looks so delicious. The kale micro greens are too cute, and delicious too I’m sure. I love goats cheese so that also looks incredible. The salts are also great, i could put the hot one on everything!

    You always have great things in your kitchen from the markets. A good bacon definitely will change a dish and Ottways is one of my favourites along with Shultz from South Australia….OMG!. I haven’t seen the baby sprouts yet. i look forward to those because adult kale just doesn’t do it for me. I do like kale powder though so much more useful. I am glad you liked that couscous i am very impressed with it myself. we eat a lot of it because it is so quick to prepare and feels like we are being very virtuous. If I can afford the postage we can swap more things in the future….have a great May x

  11. Kale micro herbs? They look so pretty. I think I can smell that bacon! Once you have proper bacon you never go back to the bad stuff – I make my own now it’s easier that you think 🙂

    • Everything I purchased from the health food store and The Source bulk foods will be tried in replacement of condiments that are usually used in recipes. x

    My goodness, so many yummy things to try… I look forward to the recipes 🙂
    I’m so glad you lashed out and bough such good bacon, once you have you will never go back… I got some at the farmers market this morning then came home and cooked it… perfection! A Source bulk foods, just opened up around the corner form me, so now I take my containers in and they fill them up… so good! 🙂 Oh and I bough coconut sugar for the very first time this month to make some paleo foods for a friend… so it must be trending! Thanks for sharing! Liz xx

    • Thank you Liz. Coconut sugar is all the rage at the moment and I’m looking forward to trying it in replacement of refined sugar in some recipes I have stashed away. Will let you know how it turns out x

  15. Meredith goats cheese is my favourite… I have to remind myself of the price in order to exercise moderation of consumption!
    I’ll now be on the look out for kale micro herbs… I love my greens, fresh eggs & cheese. I find they make a great breakfast start to the day.
    I like little ears aka Orecchiette pasta, and find it’s great with a ragu (which I make from left over slow cooked meat), or a favourite of the G.O.’s sliced pork & fennel sausages, peas and green shallots in a cream sauce.
    Otway bacon, yum… yes bacon isn’t bacon, the quality of good bacon is a vast improvement on the supermarket stuff.

    • I agree Ella Dee – it’s almost like for special occasions only 😉 I tried to do that but I found it’s an absolute must have on our souvas and lamb dishes!

  17. Kale sprouts!!! I must have some this very minute. I’m not a fan of uncooked grown-up kale, but I think I would elope with the teeny, tiny stuff on top of my finger food. So fancy.

  18. There’s always seems to be a theme in the IMKs and this month it seems to be coconut sugar. As to kale sprouts…they’re super cute. I’ll have to look out for them. Yes, that Meredith Dairy Goat’s Cheeses is indeed the best. xxx

    • Thanks Liz, those kale micro herbs were very cute. I find they don’t add a lot of flavour but they look really good in dishes for sure. I loved using them on the canapes I made while I worked at the tennis.
